Our client is a contemporary yet historic 4 Star hotel in Central London, just a short walk from Covent Garden station and the Thames. Dating back to 1909, the hotel has been refurbished to a modern and contemporary style.

What’s involved?

As an experienced Sous Chef, you will support the Executive Chef as well as managing the kitchen team of 17 in their absence, always ensuring the highest of standards of food quality, hygiene and presentation at all times.

The Sous Chef will take control of food and payroll costs, as well as ordering stock and ensuring stock levels are rotated and kept to the required levels. You will also be responsible for ongoing Health and Safety, Food Safety and Allergen activities to ensure full compliance.

You will have a genuine passion for great food, presentation, service and people with the ability to execute high quality menus.

You should ensure all food is cooked, prepared and presented to the high quality expected, in line with company standards. Breakfast is their busiest time of the day, catering for up to 500 covers daily whilst lunch and dinner are not as busy. Afternoon teas are also a big hit here with them averaging around 50 covers per day.

The successful Sous Chef must be able to commute to central London daily and should expect to work a variety of shift patterns, including evenings and weekends. The ideal candidate will have previous Sous Chef experience in a similar hotel operation, and be familiar with procure systems.
