I once ordered an egg sandwich at a bakery in Switzerland and walked out with an egg and a baguette. I never went back.
To raise money for a school trip Oliver took his first job at the local pub washing plates and cutting vegetables. When finishing his A levels, he moved to Switzerland and started studying at Les Roches International School of Hotel Management. During this period Oliver had three internships working in various departments including FOH in India, marketing in the Turks and Caicos Islands and management at Gleneagles. Oliver moved back down to the New Forest and started working at Careys Manor as Head Barman for a few years, an urge of wanting to get into the Michelin style of service created a move to the newly opened Moor Hall in Aughton. Here Oliver learnt about a whole new level of service. The restaurant manager from Moor Hall moved to Gidleigh Park and offered Oliver the chance to work there with him, where he stayed until the pandemic hit. Leaving Gidleigh after the first lockdown, Oliver moved to The Atlantic Hotel in Jersey as restaurant manager.
